Yuzu Craze

yuzu2.JPG

Yuzu, or grapefruit, has been one of the most widely used essences in Japanese food, especially as a dipping sauce.  It’s tasty, refreshing, healthy and can be widely applied to almost all the dishes.  I use it in almost every dish I cook and now I don’t think I could live without my Yuzu Ponzu (Grapefruit Vinegar) anymore.  I found that after moving to Japan, I have adopted my cooking to Japanese ingredients and sauce. Yuzu Ponzu is best for dipping meat and seafood in shabu-shabu, as a sauce for cold tofu, as a salad dressing and even as a substitute for soya sauce in stir fry meat dishes.

And I come across the current Casa Brutus magazine that the new Yuzu Craze in Japan is the Yuzu Kosho.  It’s a chilli paste with grapefruit flavor.  Can’t wait to try it out.  Will let you know how it tastes.  Stay tuned.
